1 Ripe Banana
1 Pineapple Cut in small squares (You can used canned pineapple drained)
1/2 Cup of Orange or Lemon Juice
1 cup of NON-FAT Milk
1/2 Cup of fresh strawberry
3 to 4 Ice cubes (Crushed))

‘Sunrise Potato Frittata(Omelet) ‘

1 1/2 Cups Potatoes, Cut in 1/2 Inch cubs
1 Tbsp of Cooking oil
1 1/2 Finely chopped cooked Ham
3/4 Cup of Cheddar cheese
8 Slightly beaten Eggs
1/3 Cup of milk
1 Diced Green chile peppar (USED canned if you can't find fresh)
1/4 Cup of finely chopped Green Onion
2 TSP. Fresh Oregano Crushed
1/4 TSP. Os Salt
1/2 Jar of Roasted sweet peppers, Cut into thin strips
1 1/2 Cup of Salsa
1/4 Cup of Fresh Cilantro Crushed
1/4 Slice Green Onion
1/4 Cup of Shedded Parmesan Cheese

1-Cook Potato in hot oil,uncovered, over medium heat, 5 min. cover and cook 5 min. More until Golden brown.

2-Remove from heat...

3- Sprinkle ham and 1/2 Cup of The cheddar cheese over the Potatos

4- In a Large mixing Bowl, Stir the Eggs, Milk, Chili Peppers, Chopped Green Onions, Oregano and Salt

5- Pour into the Potates

6-Arrange the Pepper strips on the top of the Frittata

7-Bake on Oven at 350 Degrees for 25 to 30 min

8-Take out of the Oven and sprinkle Cheese and Sliced Green Onion on top. Let stand for 5 min.

9-Serve with the Salsa and Cliantro

‘Sweet potato with cranberries‘

2LB Sweet potatos
1/4 TSP Ground cloves
2TBSP. Margarine or Butter
1 To 1 1/2 Cup of Cranberried
1/2 Cup Cranberry Juice cocktail or Apricot nector
1 TSP of finely shrdded Orange peel
1/3 Cup of Maple syrup
1/4 Cup chopped walnuts or Hazelnuts

1- peel and slice Sweet potatoes into i/2 inch square

2- Sweet potatoes in melted Margarine or Butter, add ground Cloves, cover in medium heat, for 8 min. or until nearly tender

3- stir occasionally

4- add Berries, juice or Nectar and the shredded Orange peel

5- heat to boiling reduce heat, simmer covered for 5 min or until Sweet potatoes are tender.

6- gentle stir Maple syrup and Hazelnuts

‘Sweet pea soup‘

1 Teaspoon unsalted Butter
1 small Onion, peeled and roughly chopped
5 cups of fresh or thawed Frozen peas
2 cups vegetable stock
1 tablespoon chopped Chervil plus hole leave for Garnish
1/4 cup heavy cream
Salt
Fresh pea pods
Freshly grated Nutmeg

1- melt Butter in a skill over medium heat. add onion. cook, stirring frequently, until soft, about 1 min.

2- add Peas, Vegetable stock, and chopped Chervil. bring to a boil

3- reduce heat and simmer until Peas are very soft.

4- pure in a blender until smooth

5- thin mixture with heavy cream to taste.

6- refrigerate until chilled, about 1 hour

7- remove from the refrigerator and add Salt and Pepper to taste

8- Garnish with Pea pods or Nutmeg

Cheddar cheese
Mozzarella cheese
Sour cream
Salsa

1- warm Tortillas both side

2- spread about 1 tbs. of Sour cream in one side

3- sprinkle Cheese and place Tortillas one top of the other until lager in 3

4- bake or cook in medium fire until Cheese melt.

5- cut in 4 and Garnish with Salsa and Cilantro
