2 cups mashed cooked sweet potato( pureed in a food processor ),
3 large eggs ,1 cup sugar ,1/4 brown sugar, 1/4 cup half and half
,3 tablespoons butter, 1 teaspoon vanilla ,1 teaspoon cinnamon ,1/2
teaspoon nutmeg ,1/2 teaspoon salt zest of a lemon and 1/2 teasppon
of lemon juice Mix all of the ingredients till smooth, place in
to the pie crust.
Pie crust: 3 ounces of soft cream cheese 6 tablespoons of soft butter
3/4 cup flour 1 tablespoon sugar dash of salt Mix dough thoroughly
and refrigerate for an hour or firm. Before rolling out let it stand
10 minutes at room temperature.

preheat oven to 200c cook pie crust till warm.
In a large bowl whisk together 4 eggs and 1/2 cup of sugar.
Add in cup of cream, 4 table spoon of butter, 1 1/2 teaspoon
vanilla,a splash of lemon juice,1 teaspoon of cinnamon, 1 teaspoon
of nutmeg,add in 2 pounds of sweet potato puree.
Mix til smooth, bake for 20-25 minutes and turn oven down to
165c.
and cook about another 20-25 minutes.
cool compeletely.
Serve with whipped cream.
